Ages 15 & Up: The best way to feel more comfortable in the kitchen is to be more familiar with some of the basic cooking techniques that make all tasks just a little easier. You will learn by doing! You will learn knife skills including how to slice different foods, dice and chop onions, and even how to hone and sharpen your knives. Cooking techniques will include how to know the difference between saute, stew, roast and braise. You will fix a first class lunch in the process. The menu includes an Herbed Pork Involtini (Pork rolled with herbed cheese) first course followed by Asian Glazed Chicken Thighs served with fool-proof rice pilaf and fresh vegetables from the farmers market. For dessert, we have something you've never seen before; Dessert Tacos! You have to see these to believe them. This class features take home recipes as well as plenty to eat! So bring an appetite and join us. $20.00 food fee due instructor at class time.

Ages 15 & Up: Now with more knife skills and techniques to ease your time in the kitchen and prepare great food. First, we will prepare a delightful appetizer recipe of Barbecue Glazed Turkey Meatballs (we'll serve them on a toothpick), then an entree of Pan Seared Salmon with an Orange Vinaigrette accompanied by the freshest veggies we can pick up at the farmers market. To top it off, we'll have homemade shortcakes topped with fresh berries. Kitchen Skills I is not a pre-requisite, but this class is not for the novice or beginner cook. This class features take home recipes as well as plenty to eat! So bring an appetite and join us. $20.00 food fee due instructor at class time.

Ages 18 & Up: The proper use of the chef's knife in the kitchen will do as much to improve your cooking ability as anything else you can do. This is a hands-on class that emphasizes proper technique, safety, selection of proper knives and care and upkeep. We'll discuss how knives are made and even what kind of cutting board to buy. You can use our knives, bring your own to use (we'll evaluate them for you) or purchase new ones from the complete line of professional knives that we have available (and you even get a discount!). You will peel, slice and chop vegetables and fruits as well as separate and de-bone a chicken. You will use a peeler, chef's knife, paring knife and boning knife during the course of the class. Lunch will be prepared from the fruits of your labors, so bring an appetite. $15 food fee due instructor at class time..

Ages 21 & Up: Ask any wine aficionado about matching a good Indian Curry with wine and they will just shake their head. Some people won't believe it, but you really can find good wines to match with a good Indian Beef Vindaloo (served with basmati rice, of course). Or how about matching three good wines with spicy, barbecued chicken? Of course we'll also have to do a seafood dish; in this case it will be a Shrimp and Andoui Sausage Gumbo. This dish is real Louisiana style with our own homemade roux and finished off with okra and file', just like they make it in the bayou. Our wine selection will be from all kinds of places; no California, no Australia and no French. Remember, in these classes we cook, clean up, then taste the three foods with the three paired wines. Take home recipes and extensive wine notes provided. So schedule the baby sitter and plan your monthly date night. $25 food and wine fee due instructor at class time.

Ages 21 & Up: We will offer all new recipes, never before offered in any of our classes. Recipes will include seafood in Red Curry with Sticky Rice; Pork Tenderloin with Spicy Red Wine-Blackberry Sauce; and of course a beef dish, Braised Short Ribs With Red Wine, Apricots, And Black Olives. We will have at least 9 of the best bets for wine to cook with along with the matching recipes. Remember, in these classes we cook, clean up, then taste the three foods, each with the three paired wines. Take home recipes and extensive wine notes provided. $25 food and wine fee due instructor at class time.
